The 2021 Cabernet Sauvignon Beckstoffer To Kalon Vineyard marries density, drive and focus. Dark red/purplish fruit, lavender, spice, mint and rose petal all open in the glass. This is a decidedly restrained style for To Kalon, with just as much energy as power, which is rare here. But these are not critiques. Quite to the contrary, the 2021 is shaping up to be a jewel of a wine.
