Tasting Notes and Scores
Stéphane Sésé (who now runs the enterprise single-handedly) and Patrick Sabaté wanted make the perfect champagne. This was made by Michel Drappier for them from thee parcels of Pinot Noir on limestone in the Aube. Dosage 5 g/l. Aged for seven years on lees. Deep gold. It tastes rather sweet to me; I wouldn't mind a bit more zest and freshness. It's perhaps a super-Aube champagne with a very suave texture and good persistence but I'm afraid there is absolutely no way I would pay £600 for a bottle of this. (JR)
